The main buildings of the hotel -- the Manor House, the open-air lobby, the restaurant just below, and the bar -- are set on a slope, while the villas are hidden among lush vegetation, and placed to gain the most dramatic ocean and sunset views. All the buildings have been carefully designed to harmonise with the natural surroundings, using natural materials including exotic stones and woods, to represent the natural elements of earth, air, water and fire. The enchanting gardens, full of hummingbirds, were created by a leading Caribbean landscape architect to capture the beauty of the area, and feature quiet walkways lined with brilliant bougainvillea, hibiscus and flame ginger, leading to banana groves, pineapple beds and a miniature cane plantation.
Just down the steps from the lobby, the open-air Windsong Restaurant captures a breathtaking view of the sunsets and the endless Caribbean Sea. It is known as one of the top places to eat on the island, and the French-born chef specialises in using fresh local produce to create French-Creole dishes with an Asian twist, such as coconut breaded grouper, or St Lucian crab backs with sorrel chutney. The adjacent trendy and relaxed C Bar, with low-slung red and black couches, serves international cocktails, and fine wines from the large Calabash Cove wine cellars, to the accompaniment of soft piano music.
A central feature of the resort is the 100-foot Sweetwaters infinity-edge pool, with its beautiful natural rock waterfall. It is surrounded by decks with mahogany loungers, and has a swim-up pool bar serving delicious seafood lunches.
